We’re challenging all Accor chefs around the world using Winnow to turn their most-wasted ingredients into dishes worth celebrating. Use your trimmings, peelings, or offcuts to create something delicious. Whether it’s a rich bread and butter pudding from leftover bread, a deep treacle glaze from vegetable trimmings or a delicate tomato consommé made from offcuts, your creativity is what counts.
